signature christmas drink

Beer and wine are fun, but this Christmas spice it up with a signature holiday drink. It is an easy way to add a special touch to your party. Mix up a big batch, add it to a pitcher, place on a bar with some cute holiday glasses, and voila, a drink they'll never forget...unless of course they have a few too many.

1/4 cup sugar
1/4 cup water
3 pints of raspberries (save a few for garnishing)
2- 3 sprays of mint (about 20 leaves)
1/4 cup fresh lime juice ( about 1-2 limes)
chilled prosecco or champagne 

Combine 1/4 cup sugar and 1/4 cup of water in a small saucepan. Stir over medium heat until sugar is dissolved. Once sugar is dissolved, shut stove off and add mint leaves. Allow them to steep until the syrup is completely cool. 
While syrup is cooling, gently rinse raspberries and add to a large pitcher. Add lime juice. Muddle with a wooden spoon. 
Once mint syrup has cooled, strain it through a sieve and add it to the pitcher. (The syrup is flavored by the mint so you don't want to add any of the steeped leaves to the drink). Pour in the chilled bubbly! 
Serve in a champagne flute and garnish with a few extra raspberries and mint leaves.
