low carb chicken parm

Learning a foreign language is difficult for me. Spelling (if you haven't noticed) is difficult for me. Low carb diets, difficult. But this low carb chicken parm is easy. It doesn't taste like diet food, and it isn't difficult like learning the past participle. 

I love this recipe for beginner cooks. Easy recipes like this build your confidence in the kitchen. And the more confident you are, the more you cook. I didn't include exact measurements for the ingredients. I want you to get used to using your own judgement. Trusting yourself in (and out of) the kitchen will also build your confidence. My only advice is that you can always add more. But trust me, this is easy. 

ingredients 
1-2lbs organic boneless skinless chicken breast
1 jar of your favorite tomato sauce 
mozzarella ball
dried oregano 
dried basil
dried parsley 
salt & pepper



Preheat oven to 350.
Rinse chicken under cold water and pat dry with a paper towel. Tenderize the chicken by pounding it with your fist. Cover the bottom of the baking dish with a little sauce. Add chicken. Season chicken with spices, I use about 1/8 to 1/4 teaspoon of each spice. Season with salt and pepper. Add more sauce to cover chicken. Shred mozzarella and add to the top of the chicken. 
Bake for about 30-40 minutes, until the thickest part of the chicken is no longer pink. 
*For tomato sauce I like to use Trader Joe's Traditional Marinara or Rao's Marinara sauce.

  4. I bake uncovered. If the chicken is on the thicker side, you can bake covered with foil and then remove the foil to brown the cheese just a little.
