I have to say, one of my favorite things about being a food blogger is the continuous stream, err flood, of inspiration. I'm talking the eating healthy kind of inspiration.
I always thought I was a healthy eater, I ate a garden salad at least once a day. Truth is the old me was not very creative or adventurous when it came to cooking with healthy ingredients. Only after being surrounded, albeit virtually surrounded, by such talented food bloggers that my eyes have been open to a whole new world of veggies.
Last week kale, this week purple cabbage.
Bonus: Really healthy eating allows you to shop at Whole Foods and Trader Joe's without handing over your whole wallet.
So thank you fellow food bloggers, this one is for you. And did I mention it is delicious? Just finished the bowl in under 2 minutes (now I just need to work on eating slower).
ingredients
1/2 large red cabbage
2 green apples
1/2 cup chopped walnuts
1/4 cup golden raisins
goat cheese
juice of half a lemon
3 tablespoons (or so) extra-virgin olive oil
2 tablespoon (or so) balsamic vinegar
pinch of sugar
s&p
Chop green apple into a small dice. Drizzle with a little lemon juice to keep from browning. Chop cabbage into same size bite as apple and add both ingredients to a large mixing bowl. Add golden raisins and chopped walnuts.
Whisk together oil, vinegar, salt, pepper, and sugar. Taste and readjust seasonings to your preference.
Add dressing to salad and toss.
Crumble goat cheese and add to top of salad.
Serve.
Enjoy!

This sounds delicious. I, too, thought that I ate pretty healthy until I began to see how many other options there are to add super foods. Cabbage is definitely one of them - so sure to add these ingredients to my list. thanks for sharing!

Hi Jennifer! I love that about food blogging as well. You get some many more recipes than you would just leafing through a magazine or cookbook. It has opened up a whole new world and a whole new way of eating. I also love seeing what other people eat, what ingredients they use and how they prepare it all. It's also nice to see comments on how things end up tasting.
