Can't get enough of quinoa? Me neither!
Here is another quinoa dish you can whip up in under 20 minutes.
It only requires one pot (plus) and is super, super healthy (plus, plus!)
Plus, plus, plus... it is vegan friendly and gluten-free. So go ahead, invite everyone over; your vegan, vegetarian, and gluten sensitive friends. They'll all thank you for this one!
ingredients
1 cup quinoa, rinsed
1/2 cup orange juice
1 1/2 cup water
1 (14.5 ounce) can of chickpeas, rinsed and drained
1 red pepper, julienned
1 small red onion, finely chopped
2 tomatoes, diced and seeded
1/2 cup raisins
1/2 cup fresh cilantro, minced
1 teaspoon curry powder
In a large saucepan, bring water and orange juice to a boil. Stir in quinoa, chickpeas, red pepper, onion, tomatoes, raisins and curry.
Return to a boil. Reduce heat; cover and simmer for 15-20 minutes until liquid is absorbed.
Remove from heat and fluff with a fork. Sprinkle with cilantro.
Serve.
